My cutting board was not in line with my workstation. I was at Eleven Madison Park. Everything had to be perfect,&#8221; said Chef\u00a0<span class=\"markfotf1x5a9\" data-markjs=\"true\" data-ogac=\"\" data-ogab=\"\" data-ogsc=\"\" data-ogsb=\"\">Neel explained<\/span>. When you&#8217;re working with the world&#8217;s most celebrated chefs, every detail needs to be perfect.<\/p>\n<h3><strong>The Michelin experience<\/strong><\/h3>\n<p>By the age of 25, Chef Neel Kajale has done quite the tour of world-famous, Michelin-Starred restaurants and their chefs. After graduating from the Institute of Hotel Management, he worked with Chef Atul Kochhar, of\u00a0 Benaras fame, joining the team as they began NRI in Mumbai. He has also worked at The Bombay Canteen and Farzi Cafe before setting off to study at the Culinary Institute of America in New York City, where Eleven Madison Park would come calling. He loved food, disliked maths, so the choice was simple. \u201cThere was no point in struggling with something I had no talent for. What I did have, however, was a passion for food,\u201d recalls Neel. Encouraged by his parents, he leaped headlong. \u201cI had no backup plans. It was a do-or-die situation for me,\u201d adds the 25-year-old.<\/p>\n<p><em>MasterChef<\/em> piqued his interest, and he was hooked. \u201cAs an Indian, it was a revelation to see what could be done with food. Here, we didn\u2019t think about plating food or about Michelin stars. I wanted to know what is happening in the world of food,\u201d explains Neel who was blown away by the culinary revolutions in France, Italy, Germany, and Spain.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-11017 lazyload\" data-src=\"https:\/\/www.globalindian.com\/youth\/\/wp-content\/uploads\/2022\/02\/IMG_B5164849-EA8E-4602-AD88-0F1431720248.jpg\" alt=\"Indian chef | Neel Kajale\" width=\"628\" height=\"838\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 628px; --smush-placeholder-aspect-ratio: 628\/838;\" \/><noscript><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-11017\" src=\"https:\/\/www.globalindian.com\/youth\/\/wp-content\/uploads\/2022\/02\/IMG_B5164849-EA8E-4602-AD88-0F1431720248.jpg\" alt=\"Indian chef | Neel Kajale\" width=\"628\" height=\"838\" \/><\/noscript><\/p>\n<h3><strong>New York Minute<\/strong><\/h3>\n<p>In June 2021, Eleven Madison Park re-opened its doors to guests &#8211; even on opening night (after the pandemic), the three Michelin-starred restaurants had a waiting list of around 15,000. And Neel was at the heart of plating, cooking and more. Celebrities streamed in &#8211; Angelina Jolie, Jake Gyllenhaal, Chipotle founder Steve Ells, etc. For Kajale, however, accustomed as he was to celeb-spotting, Angelina Jolie was a revelation. \u201cYou feel good because they\u2019re so mesmerized by what you\u2019re doing,\u201d he recalls, adding, \u201cRightly so because the food is phenomenal but it\u2019s so stressful that after a point, you start saying, it\u2019s just food, not rocket science.\u201d<\/p>\n<p>Plating up aging beets and mustard leaf <em>kimchi,<\/em> or learning a thing or two about chef-owner Daniel Humm\u2019s famed dry-aged duck breast \u2013 it\u2019s the sort of experience any young chef cherishes. Neel was no exception \u2013 with a combination of talent, dedication, and unshakeable grit. \u201cYou need to bring your A-game every day. If you want to excel at anything, you need to give it everything. The standards and expectations are so high,\u201d he explains.<\/p>\n<h3><strong>When a test kitchen turned food into learning<\/strong><\/h3>\n<p>His days of exploring the fine dining experience, of plating herbs with tweezers are behind him for now. Except for the tweezers, which he carries around. \u201cSince there were so many guest walk-ins at Eleven Madison, we couldn\u2019t really do things with our hands. So, we used tweezers. Now &#8211; instead of plating herbs, I\u2019m flipping <em>phulkas<\/em> at home!\u201d smiles the chef who is reinventing his culinary repertoire.<\/p>\n<div id=\"attachment_11018\" style=\"width: 580px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-11018\" class=\"wp-image-11018 lazyload\" data-src=\"https:\/\/www.globalindian.com\/youth\/\/wp-content\/uploads\/2022\/02\/IMG_6173.jpeg\" alt=\"\" width=\"570\" height=\"748\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 570px; --smush-placeholder-aspect-ratio: 570\/748;\" \/><noscript><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-11018\" class=\" wp-image-11018\" src=\"https:\/\/www.globalindian.com\/youth\/\/wp-content\/uploads\/2022\/02\/IMG_6173.jpeg\" alt=\"\" width=\"570\" height=\"748\" \/><\/noscript><p id=\"caption-attachment-11018\" class=\"wp-caption-text\">Chef Neel&#8217;s journey took him from Mumbai to Manhattan as he worked with some of the world&#8217;s best chefs<\/p><\/div>\n<p>Today, Neel yearns for innovation, to find a bridge between food and media that India &#8211; and the world, haven\u2019t seen before with his painstaking work at the test kitchen. Think Chef Sanjyot Keer, of Your Food Lab, or global superstars like Babish and Joshua Weissman. After decades of watching the most glamorous chefs plate up gourmet meals, Neel has found his calling at Haven\u2019s Kitchen as test kitchen manager (New York). Diving deep into recipe development and content creation, his days are filled with ingredient-spotting and taste trails. These are then filmed to be shared with epicureans across platforms.<\/p>\n<p>\u201cIf a tomato soup is trending on a rainy day, my job would be to use our sauces to make that soup. It\u2019s a very different life from running a station and handling pressure. Here, you\u2019re perfecting one thing, time and time again,\u201d he adds. Not an easy job but one that has, as Neel puts it, brought him closer to food.<\/p>\n<h3><strong>A few of his favourite things<\/strong><\/h3>\n<p>Ask him what he truly loves to cook, pat comes the reply, \u201chome food.\u201d For Chef Neel, it\u2019s the food that nourishes him. The welcome sound of a fragrant curry leaf popping in hot oil is his all-time best aroma. \u201cIt&#8217;s so special to Indian cooking. It\u2019s something I absolutely love,\u201d says Neel.<\/p>\n<p>\u201cWhat do I cook for myself? A <em>dal chawal<\/em> or <em>roti sabzi.<\/em>\u201d His kitchen at his New York home is stocked with Indian ingredients and his mother, does, on occasion receive a call with a request, \u201cHow do you make your<em> dal<\/em>?\u201d Not the restaurant-style <em>dal tadka<\/em> but \u201cmum\u2019s simple <em>moong da<\/em>l\u201d is unmatched.<br \/>\nThe young Indian chef is a music enthusiast and often strums the guitar.
